Sheet Pan Chicken Taco Lettuce Boats

1. Preheat oven to 425°F. Line a large sheet pan with parchment.
2. Toss chopped chicken with taco seasoning, garlic powder, smoked paprika, and lime juice. No oil needed.
3. Spread chicken in an even layer on one side of the sheet pan. Bake for 10 minutes.
4. While that cooks, toss shaved corn and purple onion with olive oil, chili powder, and salt.
5. Remove the pan, push chicken to one side, and spread the corn mixture on the other side.
6. Return to oven for another 10 minutes. Broil the last 3 minutes for crispy edges and charred corn.
7. Remove from oven. Squeeze lime over the corn, then toss with Mexican crumbling cheese and cilantro.
8. Assemble in lettuce leaves with all your cold toppings.
